Pink salmon salad with honey lemon dressing

A welcome break from roast turkey leftovers!

This is a refreshingly good salad with mixed fruits and nuts, veggies and herbs, that goes well with honey, lemon and mustard dressing.

For the salad:

  • canned pink salmon
  • sun-dried tomatoes
  • ripe mango slices
  • zucchini slices
  • sweet peppers
  • capers
  • pine nuts
  • mixed breakfast cereals
  • mint and basil leaves

For the dressing:

  • juice of 1 lemon
  • 1 tbsp honey
  • 1 tbsp wholegrain mustard
  • olive oil from the sun-dried tomatoes
