When it comes to roast turkey recipes, I leave it to the experts! I followed two recipes, one for brining and one for stuffing.

The brining recipe is part of Alton Brown’s roast turkey recipe:  The stuffing recipe came from Jamie Oliver. Since I don’t eat four-legged animals, I used chicken bacon instead of pork mince. Here’s Jamie’s Christmas turkey recipe:

My partner-in-crime JD can attest that brining the turkey first before roasting it works perfectly well (like the two of us. Happy anniversary, Sweetie!). It is worth the extra effort!
