One of the things that I look forward to after Christmas is recycling leftovers. Why did you think I roasted a 4.5 kilo turkey when it was just me and JD at home?

This wonderful potato soup is made from leftovers as follows:

  • mashed potato that JD made
  • gravy that I made out of roast turkey drippings
  • chicken bacon stuffing from the turkey

I combined them all with caramelised onions, juice from half a lemon and water. I added thyme and gruyere cheese for the finishing touch.

Perfect on a cold and rainy day!

Back home in the Philippines, tuna macaroni salad has always been part of my family’s Noche Buena (Christmas Eve) feast. How come you may ask, since this is not a traditional Filipino recipe? But we make it because it is SO easy to do: no cooking, not a  lot of chopping, just put everything together and chill in the fridge. We normally use mayonnaise but in the spirit of healthy feasting, I used homemade vinaigrette as dressing. The result is absolutely better, taste-wise and health-wise!

Over time I have developed intolerance to wine. I would get migraine after a glass or two. I think it started that fateful day when I had four glasses of wine then followed by two shots of tequila. I threw up all night then had a hangover the next day. That was my first bad experience with alcohol. I was 45.
